Weekly meal planning is one of those practices that I didn’t quite understand and use when I first started cooking, but I grew to love it and live by it as time went on. Unlike some people, I really enjoy meal planning and even look forward to working on my list of what I’m going to cook for the week, followed by my grocery list. So I was excited when Linda asked me to submit my weekly meal plan as a guest post on her food blog! Here’s a peek at what I’ve been cooking up in my kitchen this week:
Saturday
Date Night: my husband and I decided to try out a pizzeria in East Sacramento called One Speed. We had heard nothing but good things about this place, and now that we’ve eaten there, we plan on adding to the praise. Yay for awesome new restaurants in Sacramento!
Sunday
Paprika chicken, roasted asparagus, brown rice I cook about four times a week, so I try to make at least two out of my four meals light and healthy. Whenever I cook one of my healthy meals, I always try to make sure it consists of a protein, a veggie, and a complex carb (i.e. brown rice). I love adding paprika chicken to my weekly meal; it’s basically chicken breasts seasoned with salt, pepper, and paprika, then pan seared in a little bit of olive oil. So simple and healthy!
Monday
Book club meeting, so no cooking for me!
Tuesday
Ground beef tacos with tomatoes, lettuce, light cheese, and light sour cream for toppings
Otherwise known as, “Taco Tuesday.â€
Wednesday
Baked Salmon, roasted artichokes, brown rice
Got to get in those omega-3’s.
Thursday
Hot dogs, tortilla chips with salsa and homemade guacamole, veggies and hummus, watermelon, cheesecake for dessert
We’re hosting a small 4th of July get-together at our place since we have a pool and there will be fireworks going off across the street. The only thing we’re missing is a barbecue, so I’m going to cook the hot dogs in my crockpot. I’ve never cooked hot dogs this way, so wish me luck!
Friday
Leftovers. Ha, like I’m really going to want to cook after a day of entertaining guests!
