I know it is the trend to post meal plans on Mondays but since I do my grocery shopping and planning on the weekends, I’m going to go against the grain (no pun intended) a bit and post my weekly meal plans on the weekends. Hope these spark a few ideas for your own meal plans!

Lighter Mexican Meatloaf with side salad
I do not use the a whole can of enchilada sauce like the recipe calls to cut down on the sodium. I just skip the first part of step 6 and don’t add in the rest of the sauce.

Baked Pangasius with Coconut Cilantro-Sauce, rice, salad

Date night, Austin Restaurant Week
Tuesday
I cut the soy sauce in half and it’s still plenty savory. Also, I use bacon instead of the smoked Chinese sausage. I make this about every 5-6 weeks!
Wednesday
Tofu and Broccoli Stir Fry , salad
I try at least one new recipe a week. This is a new one to me!

Slow-Cooker Chili Chicken Tacos
Another new recipe for me this week. I love 8 hour slow-cooker recipes for workdays! I made sure to buy extra fixings like onions and avocados.
