I made a cheesecake for Sugarface’s birthday 🎂. He’s been craving a basic cheesecake with strawberry sauce for months. I finally gave in and made him both the cheesecake and the sauce. So for the second time in my life, I made a cheesecake! It took hours of babysitting but it didn’t crack as my first cheesecake did! It’s all about small victories when living through a pandemic. The easiest thing that made me feel like I can elevate so many things was the strawberry sauce. A vibrant-colored syrup that I’ve had countless times in restaurants literally just takes three-ingredients and about half an hour of your time. I wanted to share my excitement with those who too want to feel a little fancier with little effort. The possibilities are endless. You can add this sauce to yogurt, pancakes, sundaes, waffles, cheesecake, and more.

Ingredients

  • 1 pound strawberries sliced
  • 1/3 cup sugar
  • 1 tablespoon lemon juice

Instructions

  • Combine all ingredients in a pot over medium heat. Bring to a boil, stirring occasionally. The strawberries will release some liquid.
  • Simmer for 20-25 minutes. Stir occasionally. The sauce will thicken.
  • Let your sauce cool. It’ll thicken even further.

Notes

The sauce will keep in the refrigerator for about 4 days.
