Easy Fried Rice with Libby’s Vegetables

Do you know what I love about making fried rice? Just when you are about to give up and order takeout yet again, there’s a good chance you have everything on hand for a quick and easy fried rice dinner! Got some Libby’s Vegetables in your pantry? A couple of eggs and soy sauce? You’re more than halfway there then!

What you’ll need:
  • 3 cups cooked jasmine rice (if it’s leftover day-old rice, even better!)
  • 1 tablespoon vegetable oil
  • 2 cloves of minced garlic
  • 1/2 cup diced onion
  • 1/2 cup Libby’s Peas & Carrots, thoroughly drained
  • 1/2 cup Libby’s Whole Kernel Sweet Corn, thoroughly drained
  • 2 eggs, lightly beaten
  • ½ teaspoon toasted sesame oil
  • 3 tablespoon soy sauce
  • 1/2 teaspoon black pepper
  • 2-3 green onions, chopped

What to do if you don’t have leftover rice

You can still make delicious fried rice if you don’t have day-old rice. The reason why leftover rice works so well is that the rice is a bit drier than fresh rice. Stale rice counters the wetness of your ingredients, like the eggs and sauces you may use. So a great fix if you only have uncooked rice on hand is to make the rice and use about half a cup less water than you’d normally use for fresh rice. This will help create the drier texture of leftover rice!

The Process

So first thing first, heat the oil in your wok or large skillet. Stir in your garlic for a few seconds before adding the onions. Cook for about a minute or until the onions become translucent and soft. Then, you’ll add your leftover rice. Break it up if the rice is clumpy. Cook and occasionally stir the rice for about a minute or two.

And then, I like to push some rice aside or make a little pocket of space in your skillet to pour your egg mixture. Scramble the eggs slightly by stirring it separately from the rice. Then go ahead and stir the eggs into the rice and cook until the eggs are almost cooked through. Add in your Libby’s Veggies (for a touch of Spring and freshness to your weeknight dish), soy sauce, and sesame oil. Don’t be afraid to taste along the way so you can season to taste.

Continue to stir-fry until the veggies are warmed through and the eggs are cooked through. Now, less than 15 minutes later, you have an easy and yummy weeknight meal. Garnish with your chopped green onions and enjoy! Sriracha heart optional 😉.

  • Push some rice aside in your wok or large skillet or make a little pocket of space in your skillet. Pour your egg mixture into that uncover space of your wok or skillet. Scramble the eggs slightly by stirring it separately from the rice.
  • Stir the somewhat undercooked eggs into the rice and stir-fry until the eggs are almost cooked through.
  • Add in your Libby's Veggies, soy sauce, and sesame oil. Don't be afraid to taste along the way so you can season to taste.
  • Continue to stir-fry until the veggies are warmed through and the eggs are cooked through.

Fun ways you can customize your easy fried rice recipe

  • Add your favorite protein. Chicken, fried tofu, shrimp, crab. This recipe is your oyster.
  • Play with your seasonings. Some other ideas: adding some minced ginger or red pepper flakes, or even chopped cilantro!
  • Play with your sauces! You can try adding a tablespoon of oyster sauce or a teaspoon of fish sauce for an extra umami kick.
  • Play with more add-ins. I love adding kimchi to change things up!
