Weekly Meal Plan (vol 1)

I know it is the trend to post meal plans on Mondays but since I do my grocery shopping and planning on the weekends, I’m going to go against the grain (no pun intended) a bit and post my weekly meal plans on the weekends. Hope these spark a few ideas for your own meal plans!

Saturday

Lighter Mexican Meatloaf with side salad

I do not use the a whole can of enchilada sauce like the recipe calls to cut down on the sodium. I just skip the first part of step 6 and don’t add in the rest of the sauce.

Sunday

Baked Pangasius with Coconut Cilantro-Sauce, rice, salad

I use this recipe for the fish which calls for tilapia but I love the texture and price-point of pangasius! It’s one of Alan’s favorites. Like tilapia, pangasius is a milder fish. I nervously heated up leftovers at work once and my coworkers were drawn to the smell. They ate off my plate and demanded the recipe!

Monday

Date night, Austin Restaurant Week

Tuesday

No Clay-Pot Chicken

I cut the soy sauce in half and it’s still plenty savory. Also, I use bacon instead of the smoked Chinese sausage. I make this about every 5-6 weeks!

Wednesday

Tofu and Broccoli Stir Fry , salad

I try at least one new recipe a week. This is a new one to me!

Thursday

Inside-Out Chicken with Stuffing

Friday

Slow-Cooker Chili Chicken Tacos

Another new recipe for me this week. I love 8 hour slow-cooker recipes for workdays! I made sure to buy extra fixings like onions and avocados.
